Company Carapelli  from Firence was the first company to launch bottled extra virgin olive oil on the market in the 1970.  Apart from process certification, which aims to provide the consumer with maximum guarantees and a high level of transparency; and at the same time provides trade assurance, An extra virgin olive oil that has an aroma with very intense olive notes, giving the oil a special fragrance, a sweet initial taste sensation and a slightly piquant after-taste.Carapelli is the first company in its field to obtain certification of its products.

Extra virgin olive oil is generally obtained by crushing the entire olive, including the stone."Il Nobile", on the other hand, derives from a delicate pressing of only the pulp of the olive, the considered the "nobler" part of the fruit.No stone means no bitter after-taste. In addition, the absence of the stone means that its rounded taste and intense aroma, characterising Il Nobile, are retained longer. It is an olive nectar, of the highest quality, with low acidity and a defined content of phenols (natural antioxidants) useful in defence against premature ageing of the cells.
